WINEMAKING NOTES:

The priority of expression for this wine is finesse and elegance, styled to highlight the aromas and flavors of the Pinot Noir fruit.  Scents of rose petal and forest floor are followed by flavors of subtle spice oak and jasmine tea.  The wine is supported by bright acids and integrated tannins to leave the palate refreshed and wanting more.

FERMENTATION/AGING:

The grapes are fermented in stainless steel at low temperatures to maintain the delicate Pinot Noir fruit and gently pressed on completion to avoid any excess tannin. After the completion of malo-lactic fermentation, the wine is aged with tight grain French oak for a maximum of 8 months to develop layered complexity yet maintain the elegant nuances.

FOOD PAIRINGS:

A versatile wine, this buoyant Pinot Noir pairs well with duck confit, ratatouille, light white fish dishes and veal.
