WINEMAKING NOTES: 

It was important to us when making the Oak Ridge Cabernet Sauvignon to
make sure the wine had a distinct character of Cabernet. To us that means
lots of dense fruit-such as blackberry and cherry- accentuated by classic spice
notes, in this case black pepper, cedar, and oregano. The oak shows through
in a way that is appropriate for the varietal with pleasant chocolate tones
while the palate has a bold grip complemented by a nice richness in the midpalate
that brings balance to the wine.

FERMENTATION / AGING:

We embraced the structure up front when making this wine because we
wanted a strong phenolic profile to bind with and stabilize the tannin. We
fermented warm but not hot and added a blend of binding agents to grip
color, tannin and the precursors of body. After fermentation, we matched our
lots to a variety of oak programs and allowed the oak ample time to absorb
the necessary aromatics from the wood. After ample time to allow the wines
to mature, we picked our favorite lots to construct the final blend.

with fresh Parmesan Reggiano
