WINEMAKING NOTES:

We have the opportunity to work with various estate vineyard sources and all are not the same.  This wine is about the Lodi Appelllation.  In this wine you will find purity and elegance, red berry fruit notes and flavors, delicate tannins and subtle oak spice tones that lend to a layered complexity with intriguing finesse.

FERMENTATION/AGING:

Created with a more delicate approach of winemaking, it is the grapes that are the star with minimal intervention.  Crafted using traditional European wine making methods, the individual lots are aged separately with 1 year old oak for 16 months and then blended to sustain the varietal characteristics of the Cabernet Sauvignon grape.

FOOD PAIRINGS:

Elegant enough to be enjoyed by itself, it is a great match for pork chops, veal and peppercorn sauces.  This wine is also a friendly match for such foods as French onion soup and tangy hard cheeses.
